PROCESS

The Agave Juice is  extracted and processed by diffusion, then filtering and clarifying it.

The temperature is adjusted and the juice is concentrated for further processing into a syrup or prebiotic soluble fiber in powder.

Process Order:

1 Jima, that is the action of harvesting Agave Plants.

2 Reception, Inspection and Selection of RAW AGAVE.

3 Splintering of agave core by milling process.

4 Extraction of agave sugars by DIFFUSION: using steam and water to wash out raw agave’s carbohydrates.

5 Collection and storage of RAW AGAVE JUICE from Diffusion Process.

6 Centrifugation of raw agave juice to suspend organic matter.

7 Filtering Process to eliminate residual organic matter.

8 Acidulation, Hydrolysis and Clarification Processes.

9 Demineralization by Dialisys Process (we are pioneers into

the Agave Syrup industry to use it)

10 Juice Evaporation Process: to reduce water content and

bring the syrup to 75 BRIX.

11 Storage of AGAVE SYRUP 75 BRIX ready to commercialize.

AGAVE TRADITION

Agave, the generic name that was given to know scientifically in 1753 by the swedish naturalist Carolus Linnaeus, who took it from the greek Agavos. In the greek mythology, Ágave was a menade, Cadmus daugther king of Thebes, in front of a crowd of Bacchantes he killed his son Pentheus, Cadmus successor on the throne. The word agave thus alludes to something admirable or noble.

Agaves have been used by the inhabitants of Mesoamerica from about 9,000 years ago, in general, before the arrival of the Spanish. Agave was used for the production of sugars and fibers.

The tequilana Agave is monocarpic, blooms only once in their life and then dies. Flowering occurs after a decade. The plant produces a flower stalk few meters high, with numerous umbels of greenish and vertical tubular flowers.

Pollination depends exclusively on a bat leptonycteris nivalis.

Therefor, the best Agave Cores are carefully selected by farmers and jimadores 1. Only the juice extracted from the agave cores is used for the production of OAP 2, like Agave Syrup and Organic Agave Soluble Fiber.

1 Jimador is a person specialized in the harvesting process of Blue Agave.
